6 large tomatoes
4 cups chicken or vegetable stock
1 jar white beans (cannellini)
freshly chopped herbs (oregano, italian parsely, basil, etc.)
salt and pepper to taste

Directions:
Directions:
Quarter tomatoes. In food processor, blend tomatoes and half
of the stock. Strain and pour into saucepan with remainder of
stock. Allow soup to come to a boil, and then simmer about 8
minutes, add beans, salt and pepper. Simmer two more
minutes and then add herbs.

Freezes very well. If tomatoes are not in season add a pinch of
sugar to the soup. Serve with grilled bread or cheese on toast.
