- 1lb chicken, diced
- 1box Spanish Rice-a-Roni
- 2/3c instant rice
- 14.5oz can diced tomatoes, undrained
- 14.5oz can chicken broth
- 1c water
- Fajita seasoning packet
- Bell peppers/onions, diced

Layer ingredients in order:

- Chicken
- Fajita seasoning
- Chicken Broth
- Veggies
- Rice (instant and Spanish)
- Spanish seasoning packet
- Tomatoes
- Water

Do not mix all of the layers together, just mix enough liquid so the rice is covered.

Pressure cook on high for 13-15 minutes

Top with sour cream and shredded cheese
