4 cups fresh basil
4 oz walnuts*
1 cup grated Parmesan
2 garlic cloves
1 cup olive oil
zest from 1 lemon
2 tsp fresh lemon juice
salt and pepper to taste

Directions:
Directions:
1. Put 3 cups basil, ½ cup Parmesan, lemon zest, lemon juice and walnuts into food processor. Pulse until smooth.

2. Add remaining basil, parmesan and pulse until fairly smooth. Run spatula around the edges.

3. While food processor is running on low, slowly pour in oil.

4. Run processor until your mixture is smooth, add salt and pepper to taste.

5. Store in air tight container for up to one week in fridge. Freeze up to 1 year.

I like to put this into ½ pint jars to freeze, as well as smaller silicone molds for single serve cubes of pesto.
