1 whole garlic clove roasted
1 egg
1 Tbsp Dijon mustard
1 Tbsp white vinegar
1 Tbsp fresh lemon juice
1/2 tsp salt
1/2 tsp pepper
1 cup avocado oil

Directions:
Directions:
1. Cut off top of garlic head to expose cloves. Cover in olive oil. Roast at 350 for 45 minutes allow to cook until you can handle it.
2. Put everything but oil in food processor and pulse until smooth.
3. With processor on slowly pour in oil and allow to mix until thickened.
4. You can use it right away, but as it sits the flavor really develops. I suggest putting it in the refrigerator until next day, it will be to die for.
Put it in an airtight container. I use mason jars and refrigerate up to 2 weeks.

*Disclaimer* this is made with raw egg. If you can’t get passed that, this isn’t the recipe for you. I have faith in my eggs, not saying we couldn’t get sick but I believe that they’re fine.

This is also still very calorie dense. It’s healthy fats, but full of calories. So I still wouldn’t recommend eating it in large quantities.
