35 lbs tomatoes
1 can tomato paste
2 TBSP Thyme
3 TBSP Oregano
1/4 cup Sugar
2 TBSP Salt
1 TBSP Pepper
3 TBSP Basil

Directions:
Directions:
1. Cook down tomatoes, once they’ve reduced add in you tomato paste and seasonings to your liking.
*You want this sauce to be thick, if your spoon leaves trace marks and they hold form a little bit you know it’s good to go. *
2. Ladle into sterilized pint jars with 1 Tbsp lemon juice.
3. Attach lids and rings
4. Waterbath for 35 minutes.

Seasonings, all of these to your taste! Dried herbs don’t affect the acidity, add as much or as little as you’d like. Here is the amount I start with and go up. Make sure you used dried herbs.
