30 lbs of tomatoes
2 large onions
1 head of garlic
Salt to taste
Sugar to taste
2 cups fresh chopped basil

1. Wash, core and 1/4 tomatoes into a 22 qt electric roaster, or heavy bottom pot. I like using my electric roaster so I can set it to 150 degrees and let it cook them down overnight. A heavy bottom pot works as well.
2. Once tomatoes are cooked down, use an immersion blender to make a smoother sauce. You can also use a food mill here to remove the skins. We don't because we don’t mind the skins
3. Sauté 2 large onions and garlic in a pan until onions are translucent and garlic is fragrant. Add to tomatoes. Add salt and sugar to taste
*If there’s anything that I can teach you is PLEASE USE FRESH GARLIC! I beg you. Don’t use the already minced stuff. You’ll thank me. I promise.*
4. Cook down until about 1/2 reduced or it’s thick to the consistency you like. Add in chopped basil.
5. Sterilize jars. Add 3 tablespoons of bottled lemon juice to quart jars. This brings up the acidity to make it safe to water bath! Don’t skip this. You can’t taste the lemon juice.
6. Attach lids and finger tight rings.
7. Water-bath for 40 minutes.
If you wanted spicy marinara sauce you can add in dried red pepper flakes when you add in your onion and garlic.

This recipe can also be made on the stove, with a heavy bottom pot. If doing it this way you have to be attentive to make sure that it doesn't burn.
