I bag of red kidney beans that have soaked in water over night.
1 chopped onion
2 chopped garlic cloves
one smoked ham hock
1 bay leaf
water
1 package beef sausage, cut

Directions:
Directions:
Add soaked beans to your crockpot. Put in onions, garlic, bay leaf, and ham hock.
Add enough water to cover beans. Cook on low 6-8 hours.

I season beans with Tony's. If you don't have Tony's you can also add in salt, pepper, cayenne, basil, and oregano. I just put a sprinkle of each.

Fry sausage until crispy in a little oil in a skillet. Add to beans about an hour before done.

Serve over rice with a dash of hot sauce. I like Louisiana brand hot sauce.

I always make cornbread (Jiffy) to go with it.
