1 pound crawfish tails
1 stick butter
1 diced onion
1 diced green bell pepper
2 chopped celery sticks
1 bunch green onions, chopped
2 crushed garlic cloves
about 2 T flour
about 2 cups chicken broth
1/2 can tomato paste
Season with Tony's
(beef sausage, optional)

* If you don't have time to chop veggies, but a frozen bag of Pic-Sweet Seasoning Blend.

Directions:
Directions:
Melt butter and saute veggies. Add in tomato paste and stir. Add in crawfish tails. Sprinkle in the flour, stir, and cook for about 2-3 minutes. Then add in chicken broth. You want to add in enough that it's a good consistency, not too thick. Season with Tony's. Add in chopped green onions.

Serve over rice. Serve with salad and French bread.

I had left over sausage from a crawfish boil when I made this, so I added it to the etoufee. It was so good that I think I'll continue to add sausage.
