spray oil.. bag of spinach ,chopped and frozen. .12 eggs ..1/2 block of cream cheese ..8 plus large tortillas ..1 bag of Mexican style shredded cheese,..1/2 cup chopped chives.. 1 pint chopped cherry tomatoes. 1 jalapeņo finely chopped, no seeds.. sour cream and if you have it, guacamole for side dressings.

Whisk eggs, spray oil in a large skillet heat until eggs set.Add cream cheese and stir, remove from heat. Fully cover baking sheet with 6 tortillas with sides hanging over. Sprinkle Mexican cheese over and then add scrambled eggs spread evenly. Sprinkle chives,salt pepper. Micro spinach, (or not) sprinkle over, and then any left over cheese's . Put 2 tortillas in center of baking sheet and fold sides to center.. Place a second baking sheet on top and weigh down with heavy oven proof object. Bake 10-15 min. at 350 degrees. Remove cool and slice int 10 pieces. wrap and freeze leftovers.
