7 quarts apples
3 tbsp. canning salt
4 ½ c sugar
1 tsp. salt
1 c. cornstarch**
2 tbsp. cinnamon
1 tsp. nutmeg
4 tbsp. lemon juice
7 quart jars & lids (washed and sterilized)

Directions:
Directions:
Pare, quarter & core apples. Place in large bowl, cover with
water and mix in the 3 tbsp. salt to keep the apples from going dark.
In a large saucepan, stir together sugar, cornstarch, cinnamon,
nutmeg & salt. Gradually add 10 cups water, stir until smooth. Stir
until it boils, remove from heat & add lemon juice.
Pack apples in jars & cover with syrup. Wipe off tops & seal
with sterilized lids. Place in a water bath canner. Cover with water
& process in a water bath canner for 20 minutes after the water is at
a full boil. Remove and allow to cool before storing. Each quart
makes a large 9” pie. Heat pie filling before placing in uncooked pie
shell.
**I would not use the cornstarch. Just add some tapioca to the
filling as you are putting it in the crust.
