Directions:1. PREHEAT OVEN TO 400 DEGREES 2. PREPARE THE BREADING STATION WITH THREE LARGE MIXING BOWLS: ONE BOWL WITH BREADCRUMBS, GARLIC POWDER, AND PARMESAN MIXED. ANOTHER WITH THE EGG MIXTURE. AND THE THIRD BOWL WITH THE FLOUR. 3. SEASON CHICKEN WITH SALT AND PEPPER, THEN COAT EACH PIECE OF CHICKEN IN FLOUR AND SHAKE OFF EXCESS. 4. DIP THE CHICKEN INTO THE EGG MIXTURE AND THEN INTO BREADCRUMB. REPEAT FOR ALL PIECES OF CHICKEN. SET ASIDE. 5. HEAT SKILLET OVER MEDIUM-HIGH HEAT, ADD 1/4 INCH VEGETABLE OIL. 6. WHEN PAN IS HOT BUT NOT SMOKING, ADD THE CHICKEN. 7. COOK THE CHICKEN UNTIL GOLDEN BROWN, 5-7 MINUTES, FLIPPING HALFWAY THROUGH. TRANSFER TO A PAPER TOWEL LINED PLATE TO DRAIN. 8. IN A MEDIUM POT POUR PASTA SAUCE AND HEAT TO A SIMMER. 9. POUR THE SAUCE INTO A BAKING DISH. 10. PLACE THE CHICKEN IN THE BAKING DISH. 11. TOP WITH SLICE OF MOZZARELLA CHEESE AND BAKE UNTIL THE CHEESE IS MELTED, 10-12 MINUTES. 12. BROIL UNTIL THE CHEESE IS GOLDEN, ABOUT 3 MINUTES. 13. SERVE |
