2 TEASPOONS OLIVE OIL
1 1/2 POUNDS LEAN GROUND BEEF
2 TABLESPOONS TACO SEASONING
SALT AND PEPPER TO TASTE
1 (14-OUNCE) CAN PETITE DICED TOMATOES DRAINED
24 WONTON WRAPPERS
1 1/4 CUPS FINELY SHREDDED CHEDDAR CHEESE

TOPPINGS:
SOUR CREAM
GREEN ONIONS SLICED
ROMA TOMATO, FINELY DICED

1. PREHEAT OVEN TO 400 DEGREES
2. COAT A 12 CUP MUFFIN TIN WITH COOKING SPRAY.
3. HEAT THE OLIVE OIL IN A LARGE PAN OVER MEDIUM HIGH HEAT.
4. ADD THE BEEF AND USE A SPATULA TO BREAK IT UP, STIRRING
CONSTANTLY, UNTIL NO LONGER PINK.
5. DRAIN THE GREASE.
6. ADD THE TACO SEASONING AND SALT, AND PEPPER.
7. STIR IN CANNED TOMAOTES.
8. PLACE A WONTON WRAPPER INTO EACH PREPARED MUFFIN TIN HOLE.
9. SPOON ABOUT 1 TABLESPOON OF THE MEAT MIXTURE INTO EACH
WONTON WRAPPER.
10. TOP EACH WRAPPER WITH 2 TEASPOONS OF CHEESE.
11. PLACE ANOTHER WONTON WRAPPER ON TOP OF FILLED MUFFIN TIN,
12. REPEAT STEPS 9 AND 10 TO SECOND LAYER OF WONTON WRAPPERS,
13. BAKE UNTIL THE CHEESE IS MELTED AND THE EDGES OF THE WONTON
WRAPPERS ARE BROWNED. ABOUT 15-20 MINUTES.
14. TOP EACH CUP WITH A DOLLOP OF SOUR CREAM, GREEN ONIONS, AND
FRESH TOMATOES
