Juice from one whole lemon
3 cloves fresh garlic
1 tsp dijon mustard
1 can anchovies
Oil from can of anchovies
4 tbsps Romano cheese to be put on after dressing or more depending on taste
2 egg yolks coddled in hot water for 3 minutes (keurig water on small in coffee cup)
1 bag of croutons ( I use Olive Garden Croutons

Directions:
-Smash garlic in either a wooden bowl or mortar and pestle
-Smash the anchovies in same bowl as garlic
-Whisk the egg yolks in a medium bowl until smooth. Whisk in the dijon mustard until just combined add freshly ground pepper. Whisk in the anchovy-garlic mixture. While whisking, pour in the lemon juice, then whisk until smooth
-Place mixture in refrigerator for later use
-When ready to serve put Romano Cheese on the salad and toss
-Add croutons ( I use Olive Garden croutons) and toss salad again
