8 oz. softened cream cheese
1 package (3.4 z.) instant vanilla
pudding mix
1-1/2 cups cold milk (I used half &
half)
15 oz. canned pumpkin
1 tsp pumpkin pie spice
1 tsp cinnamon
1/4 tsp ginger
1 teaspoon vanilla
16 oz. whipped topping
2 lbs. Gingersnaps
Caramel sauce (optional)

Directions:
Directions:
Mix cream cheese, pumpkin & spices until smooth. Mix in
pudding & milk. Mix well. Stir in half of the whipped topping.
Layer ginger snaps and pudding mixture, repeat ending with
pudding. Top with whipped topping. Crush 5-6 ginger snaps.
Drizzle caramel sauce over whipped topping, sprinkle with
crushed snaps, garnish with remaining snaps as desired.
