1 1/2 c flour
1 c milk
3 eggs
1/2 tsp salt

Filling
1 1/2 lbs ricotta cheese
1/4 c grated Romano cheese
1 egg
1 T fresh or 1 tsp dry parsley


28 oz. spaghetti sauce

Additional cheese to put over top (Romano, parmesan, or mozzarella.

For crepes - Whisk ingredients until smooth.

Pour 2 T onto a hot, greased skillet to make a 5 inch circle.

Cook over medium heat until set but not browned. Flip until the other side is done. This takes about 15 seconds as side depending on the heat of your pan.

This makes about 18 crepes. Stack crepes between waxed paper.

Combine all filling ingredients. Spoon 3-4 T down center of crepe. Roll up.

Pour half of spaghetti sauce into 9x13 inch baking dish.

Put crepes in the sauced pan, seams down. Pour the left over sauce over all the crepes.

Cover and bake at 350º for 20 minutes. Uncover and bake 20 minutes longer (until heated through). Sprinkle with shredded Ramano, Parmesan, or mozzarella if desired.
