1 cut-up chicken / 6 chicken thighs
4 tablespoons vegetable oil, divided equally in two
2/3 cup dry white wine
2 bay leaves
1/4 teaspoon oregano
1/4 teaspoon thyme
1/2 teaspoon rosemary
Salt and pepper to taste

2 large green peppers, sliced
2 large red peppers, sliced
6 medium Roma tomatoes, coarsely chopped
3 medium sized onions, sliced

Directions:

Brown the chicken pieces in 2 tablespoons vegetable oil in a large Dutch oven over medium-high heat, 3 - 4 minutes per side. Make sure it's well browned but not burned.

Add the bay leaves, herbs, and white wine to the chicken mix and bring to a low boil. Salt and pepper to taste. Cover and reduce heat. Simmer for approx. 30 to 45 minutes.

In a second large skillet, add 2 tablespoons vegetable oil to the Dutch oven. Sauté the onions for 5 to 6 minutes. Add the sliced red and green peppers to the onions and cook further, another 10 minutes. Add to chop tomatoes and cook further, another 10 minutes.

15 minutes before the chicken is done simmering, add the cooked vegetables to the chicken and mix gently.

Serve over rice always boiled potatoes. Enjoy!
