Ingredients: sourdough bread olive oil leftover roast beef roasted red peppers pepper jack cheese FRESH basil caramelized onions ---OR--- also....mix 2 tsp PREPARED COARSE GROUND MUSTARD w/2 TBSP MAYONNAISE Could use, red onion, tomato, etc.

Directions:Put olive oil on one side of bread and toast in pan/toaster oven or grill.
Put hot roast beef on one side. Add roasted red peppers, jarred or homemade. Add fresh basil leaves. Add pepper jack cheese...or your choice of cheese.
Put in oven or toaster oven and "toast" till cheese is melted. Top with other slice of bread and enjoy.
ROASTED RED PEPPERS--- HEAT OVEN TO 450--Then TURN TO BROIL. PUT RACK ON TOP SHELF. clean peppers and cut in half put on baking sheet cut side down BROIL until outer layer of skin has blackened...about 10-20 MINUTES.
IF desired, place peppers in a zip-lock bag or other sealable container, seal and let cool about 20 minutes. Remove the skins from the peppers. The skins should easily "pinch" off. CAN FREEZE LEFTOVER PEPPERS |

Notes: Made 9/10/22---Dad was up north with Tosca puppy working on the land in Bock. Some days you just need an idea....looking for a sandwich for roast beef and basil and found some ideas and came up with this.....very yummy:) Variation: No cheese. Cook some onion in oil till just begins to soften, remove from pan, put thick tomato slices in pan and cook till nicely browned; almost caramelized...and add to sandwich with lettuce/arugula and cracked pepper.
