1 lb. Shrimp, deveined and tails removed
12 oz. Bow Tie Pasta
2 Tbsp. Olive Oil
1 Tbsp. Minced Garlic
2 Tbsp. Cajun Seasoning
⅓ c. White Wine
¼ c. Unsalted Butter
1½ c. Heavy Cream
1½ c. Parmesan Cheese
1 - 15 oz. can Diced Tomatoes (optional)

Directions:
Begin cooking pasta. In separate large sauté pan, heat oil on medium heat. Add 1 Tbsp. Cajun seasoning. Add shrimp to Cajun oil. Cook fully, then set aside. Make sauce using same pan – do not wipe the pan out. Add wine – simmer 1-2 minutes. Add butter and minced garlic – cook 1-2 minutes. Whisk in heavy cream and 1 Tbsp. Cajun seasoning – bring to simmer – keep at a simmer for 5 minutes. Reduce heat to low – add parmesan cheese, whisk. Combine pasta, sauce, and shrimp. Add diced tomatoes – optional.
