2 Tbsp. Olive Oil
Salt and Pepper
2 Chicken Breasts
4 Garlic Cloves, minced
14 oz. Smoked Turkey Sausage, sliced
1 qt. Chicken Broth
1˝ Tbsp. Cajun Seasoning
1 lb. Penne Pasta, uncooked
2 c. Heavy Whipping Cream
8 oz. Parmesan Cheese

Directions:

Season chicken breasts with salt and pepper. Set 6 qt. Instant Pot to sauté. Set heat to highest temperature. Heat olive oil until hot, then sear chicken. Sear for several minutes on both sides until evenly golden browned. Remove chicken from pot. Cut into small chunks and set aside. Add sausage and garlic to pot and cook for about 1 minute. Add chicken broth, uncooked pasta, and Cajun seasoning to sausage. Return chicken to pot; stir ingredients together. Turn off sauté function. Lock lid in place with pressure valve set to sealing. Cook on high pressure for 6 minutes. Use quick pressure release once cooking is complete. Once pressure pin drops, unlock lid. Stir in room temperature heavy whipping cream and parmesan cheese. Add additional Cajun seasoning, if desired.
