3/4 C. Sugar
1/4 t. ground nutmeg
1 T. Brown Sugar
1/4 t. ground red pepper
1 t. Coarse Salt
1 large egg white
1 t. ground cinnamon
4 C. Pecan Halves
½ t. ground ginger

Directions:
Directions:

Preheat oven to 275°. Stir together first 7 ingredients. Whisk together egg white and 1 T. water until foamy. Add pecans, stirring to coat. Add pecan mixture to sugar mixture stirring until evenly coated. Spread pecans in a single layer on a lightly greased aluminum foil lined sheet pan. Bake for 50-55 minutes or until sugar hardens and pecans are toasted. Spread immediately on waxed paper to cool.
