1 pound yellow summer squash(about 2 medium)
1 tablespoon olive oil
2 tablespoons shredded parmesan cheese
1 tablespoon panko bread crumbs
½ teaspoon paprika
½ teaspoon salt

Directions:
Directions:
Preheat oven to 400º. Cut squash into ½ inch slices and toss in olive oil. Combine cheese, bread crumbs, paprika and salt in a small bowl. Toss squash in this mixture coating each piece. Place on a foil lined cookie sheet in a single layer. Use any remaining cheese mixture to fill in bare spots. Bake 12-15 minutes or until crumbs reach golden brown.
