2 cups grated apples
2 cups grated potatoes
2 cups grated carrots
2 cups suet (substitute butter, margarine or lard)
4 cups raisins
2 cups currants
1 cup nuts
1 cup maraschino cherries
4 eggs
3 cups flour
3 cups brown sugar
2 tsps. ground allspice
2 tsps. ground cloves
4 tsps. baking soda
2 tsps. salt
2 tsps. cinnamon
1 tsp. nutmeg

Rum Sauce:
1/2 cup butter
3/4 cup brown sugar
1/4 cup cream
1/2 tsp. rum extract (or 2 Tbsp. rum)

Directions:
Directions:
Mix together apples, potatoes, carrots, suet, raisins, currants, nuts and cherries. Sift flour and spices. In a large bowl, cream sugar and eggs. Add apples, etc. mixture then flour and spices. Spray jars with pam and fill 2/3 full (mixture will expand in the jars when processed), Boil in canner for 3 hours. Serve with rum sauce.

Rum sauce: Melt butter then add brown sugar and mix well. Boil 2 minutes. Add cream and boil 2 minutes longer. Remove from heat. Add rum or rum extract. Mix well. Serve over pudding.
