200g kidney
600g rump steak
2 tbsp flour
1 large onion, chopped
2 carrots, sliced
4 tsp oil
2 tsp worcester sauce
125ml dry red wine
100ml beef stock
1 batch of suet pastry

Directions:
Directions:
-Cut kidney length ways, wash and remove core
Soak in cold water for 45 minutes
-Cut beef ¾ inch cubes and dust in flour
Heat oil and brown the beef then set aside
-Fry onion until soft season with salt and pepper, Worcester sauce, wine and stock
-Return the meat, add the carrots bring to the boil stir well
-Cover and simmer cook for 5 minutes
-Drain kidney, wash again and pat dry
Cut into cubes dust in flour and fry on all sides
-Season with salt and pepper and rest for 3 minutes
-Add kidney to the meat pan remove from the heat
-Let cool and fill the suet pastry
Put on the pastry lids on and make a small hole in the centre
-Rap in parchment tie with string and cover with foil
-Lower the pudding into a saucepan
Pour boiling hot water to about half way on the the basin
-Cover and steam for 2 hours on a low heat
