4 slices of veal escoped, trim the fat
3oz lard
˝pt ale
1 tsp thyme
1 tsp sweet mordora
3oz butter
Bacon, diced
1 tsp savoury
For the sauce
Ale stock from above recipe
4 anchovies
2 egg yolks
3oz butter
Pepper

Directions:
Directions:
~Cover the veal with some lard
~Take the ale and cook the veal in it till the blood is cooked out
~Pour ale into a separate pan
~Take the savoury, thyme, sweet marjoram and throw it over the veal and fry it in butter
~Fry the bacon bits and lay it in the middle of a dish
for the sauce
~Put into the ale anchovies, wine, egg yolks and pepper cook until anchovies has melted
~When thickened add a knob of butter and stir in
~Pour over your veal
