8 oz tail off shrimp
Wooden skewers soaked in water 20 minutes
Olive oil
Kosher salt and pepper to taste
1 peach, pitted and sliced into wedges
1 red bell pepper cored and cut into strips
4 cups baby spring lettuce mix
1/2 cup pecans
2 is goat cheese crumbled

Dressing
1/2 cup EVOO
1/4 cup white or peach balsamic vinegar
1 Tbsp honey
1/2 tsp kosher salt
1/4 tsp black pepper

Heat grill to medium
Thread the shrimp on skewers and brush with EVOO. Sprinkle with S&P
Grill about 2 minutes per side until pink and cooked

Thread peach and pepper slices on skewers. Grill 6-8 minutes total. Set aside

Prepare the dressing

Arrange lettuce in two bowls, add peppers and peaches top with shrimp, pecans, and goat cheese.
