1 1/8 cups old-fashioned oats
1/2 cup whole wheat flour
1/4 cup unbleached white flour
3/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice (slightly rounded)
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cups less fat margarine ((with 8 grams fat per tablespoon) or whipped butter)
1/2 cup dark brown sugar
1 large egg
1 1/2 teaspoons vanilla extract
1/2 cup dried cranberries (dried blueberries or cherries can be substituted)
1/2 cup pecan pieces (walnut pieces can be substituted)

OPTIONAL
2/3 cup flaked or shredded coconut
1/2 cup white chocolate chips

Preheat the oven to 350 degrees. Line two cookie sheets with parchment paper.

In a medium bowl, combine the first 7 ingredients; set aside. In a large mixing bowl, combine margarine or whipped butter and brown sugar by beating with a mixer for about 1 minute. Add egg and vanilla. Beat another minute.

On low speed, beat in dry ingredients just until blended then stir in dried cranberries, pecans, and coconut or white chocolate chips if desired.

Using a cookie scoop, drop about 2 tablespoons of cookie dough onto a prepared cookie sheet for each cookie (about 12 per cookie sheet). Bake for about 8 minutes or until just starting to brown on the edges and still slightly soft in the center. Move cookies to a wire rack to cool. Store in an airtight container at room temperature.
