Salsa:
1 med. tomato, diced
2 T. avocado, diced
1 T. cilantro, shredded
¼ lime, juiced
Black pepper

Tortilla filling:
1 t. extra virgin olive oil
½ c. canned black beans, drained and rinsed
½ t. paprika
¼ t. garlic powder
½ t. cumin, ground
1 pinch cayenne pepper
1 whole wheat tortilla
1 handful baby spinach
½ red bell pepper, cut into strips

Directions:
Directions:
Salsa: Combine tomato, avocado, cilantro, lime juice, and black pepper in a bowl. Stir well.
Filling: Over medium heat, add oil.
Add the beans, paprika, garlic powder, cumin, and cayenne to the pan and stir to combine.
Cook for 5 to 6 minutes, stirring constantly so it doesn’t burn.
Once soft and fragrant, roughly mash the bean mix with a fork to get a chunky texture.
Spread the bean mix over the tortilla, then top with spinach and red bell pepper and fold.
Serve with the salsa to spoon over your wrap.
