Equipment: 8-inch cast iron skillet or 9-inch square baking dish

1 (8.5 oz) box Jiffy Mix cornbread
2 eggs
1/2 cup mayonnaise (Duke's is best but any will work)
1/4 cup melted butter
1 cup corn kernels (not cream style!) (frozen, canned or fresh)
Small can of diced chilis if you'd like to add some spice

Directions:

Preheat oven to 400º

Spray your skillet or baking dish with cooking spray
Mix together corn muffin mix, eggs, mayonnaise, butter and corn. Pour into skillet or baking dish.

Bake for 25--28 minutes, until golden brown. Serve with butter (of course!)

You can also make this in a muffin tin. Reduce cooking time to 15--20 minutes.
You can use fresh, frozen, or canned corn. I used the spiced Mexican corn and it was really good when I added some diced chilis.
