This is all done to taste, but this is how we made our smoked turkeys. Take the turkey and inject it with as much creole butter as you wish. Next you add all the spices and rub it in real good. After that you cut up your stick of butter into little slat squares, using your fingers separate the skin from the meat so you can place the butter in between. Close up the skin by pushing toothpicks through and into the meat. Allow bird to rest in the fridge overnight. Get your smoker ready and smoke the bird on very low heat using pecan, hickory or apple wood for 4 hours, turning and flipping every half hour. If you can let the bird rest another night in the fridge. Cook in a roaster until a thermometer inserted into the thigh reads 180º. Carve and serve!
