4 potatoes, preferably russets or Yukon gold, cut into chunks
4 tbsp butter
2/3 c light cream
1/2 small green or white cabbage
6 scallions, finely chopped
Salt and pepper

Directions:
Directions:
1. Cook the potatoes in a pot of boiling salted water for 15-20 minutes.
2. Drain well and mash until smooth. Season to taste with salt and pepper.
3. Add the butter and cream and stir well. Keep warm while you cook the cabbage
4. Cut the cabbage into quarters, without the tough core. Shred finely
5. Cook the cabbage in a large saucepan of boiling salted water for 1-2 minutes, until soft. Drain thoroughly
6. Mix the potatoes and cabbage together and stir in the scallions. Season well with salt and pepper.
