1 15 oz. can pumpkin puree
1 c powdered sugar
2 tsp vanilla
1 tsp cinnamon
½ tsp nutmeg
½ tsp ginger
¼ tsp cloves
2 c whipping cream, very cold
12 graham crackers, approx.*

Directions:
Directions:
In a large bowl, stir together the pumpkin, sugar and spices till well mixed.

In another bowl, whip the cream till medium peaks form.

Fold the cream into the pumpkin mixture till it is a uniform color.

Spoon a thin layer of pumpkin cream into the bottom of a 9 inch square pan. Top with a single layer of graham crackers. Top this with ⅓ of the pumpkin cream, then keep layering graham crackers and pumpkin cream, ending with the cream.

Cover tightly and refrigerate at least 3 hours or overnight. Spoon into bowls to serve.

* For variation, try using vanilla wafers or lady fingers.
