2 - 9" Pie Crusts
7 Tart Apples, pared and cored, and thinly sliced (6 c.)
¾-1 c. Sugar, depending on tartness
2 Tbsp. All Purpose Flour
½-1 tsp. Cinnamon
dash of each... Nutmeg, Allspice, Cloves, Ginger and Salt
2 Tbsp. Butter or Oleo

If apples lack tartness, sprinkle with 1 Tbsp. Lemon Juice. Combine sugar, flour, spices and salt; mix with apples. Line 9" pie plate with 1 pastry, fill with apple mixture. Dot with butter or oleo. Add your top crust, you can make a lattice if you want to be fancy, flute the edges! Generously sprinkle the top crust with sugar. Cover fluted edges with foil to avoid burning. Bake at 400º for 55-60 minutes.

You can also do a crumb topping on this.

½ c. Butter
1 c. Flour
⅔ c. Brown Sugar
1 Tbsp. White Sugar

Mix into crumbles with a pastry cutter. Sprinkle over pie in place of the top crust and bake as normal.
