Pineapple Mix

1 20 oz. can crushed pineapple
½ cup sugar
3 tbsp. minute tapioca

Cook about 10 minutes. Let cool.
 

Crust

Ingredients:

1/2 cup sugar
¼ lb. Oleo
2 eggs
1 tsp. baking powder
2½ cups flour

Mix like pie crust, then press into pan (about 10” x 13”).
 

Filling
Ingredients:

2 8-oz. cream cheese
1¼ cup sugar
4 eggs
¼ cup flour
3 cups milk
Directions:
Directions:
Beat cream cheese and sugar in large bowl until smooth and creamy, then add eggs, milk and flour. Beat until blended.

Spread pineapple mix on top of crust. Pour filling mixture over pineapple.

Bake at 300º 1-1½ hours. Can garnish with cinnamon.

Instead of pineapple mix, a large can of cherry pie filling can be used.
