Manicotti Crepes:
1 c. Flour
3 Eggs
1 c. Water
pinch of Salt

Filling:
1½ lbs. Ricotta Cheese
2 Eggs
¼ c. grated Romano or Parmesan Cheese
1 tsp. Parsley
½ tsp. Black Pepper

Directions:
Directions:
Crepes: Mix flour, water, and salt. Beat until smooth. Beat in eggs one at a time. Batter will be very thin. Heat a few drops of oil in a 6" or 8" Teflon frying pan. Put ¼ c. of batter in pan. Tilt back and forth to spread evenly. Remove when firm, but not brown. Stack crepes on a plate.

Filling: Mix together all filling ingredients and blend well. Put 2 Tbsp. of filling on each crepe and roll up. Put filled crepes side by side in a layer of spaghetti sauce in baking pan. Cover with more spaghetti sauce and grated cheese. Bake at 350º for 45 minutes. Makes 10-12 manicotti crepes.
