4-5 lb of mussels (scrubbed)
2 yellow onions (diced)
10-15 garlic cloves (minced)
3 cups of dry white wine
2 lb of gorgonzola blue cheese (crumbled)
1 cup of heavy cream
Vegetable broth as needed
1 cup of fresh parsley (chopped)

Directions:
Directions:
1. In a mussel pot, warm the olive oil on medium-high heat.
2. Add the diced onion and minced garlic. Season lightly with salt and pepper.
3. Cook over medium-high heat, stirring, until the onions and garlic are softened and lightly browned.
4. Add the mussels to the pot.
5. Add the white wine, gorgonzola blue cheese, and heavy cream.
6. Add the mussels to the pot. Cover to steam the mussels for 4-6 minutes until they open.
7. Using a slotted spoon, transfer the mussels to deep bowls (one per person), discarding any mussels that do not open.
8. Use an immersion blender to blend the remaining liquid until smooth. If needed, thin with vegetable broth. Simmer for 5-10 minutes.
9. Slowly pour the creamy gorgonzola blue cheese sauce over the mussels in the individual bowls.
10. Garnish with fresh parsley. Enjoy with toasted crostini.
