4-5 lb of large mussels
1 cup of dry white wine
1 cup of vegetable broth
1 large onion (diced)
1 teaspoon of freshly ground black pepper
1 cup of dry Italian seasoned breadcrumbs
2 tablespoons of Italian seasoning blend
2 tablespoons of parmesan cheese
1/4 cup of fresh parsley (chopped)
6-8 garlic cloves (minced)
4 tablespoons of olive oil
3 tablespoons of fresh lemon juice

Directions:
Directions:
1. Preheat the oven to 425ºF.
2. In a mussel pot, over high heat, add dry white wine, vegetable broth, diced onion, and black pepper.
3. Boil for 10-15 minutes.
4. Add the mussels to the pot to cook for 4-6 minutes, until the mussels have opened.
5. In a bowl, combine breadcrumbs, Italian seasoning blend, parmesan cheese, parsley, and garlic.
6. In a separate bowl, whisk together olive oil and lemon juice.
7. Snap each mussel in half, and place the shell with the meat in an oven-proof dish. Make sure no liquid remains on the shell. Discard the empty shells.
8. Spoon the breadcrumb/parsley mixture over the mussels.
9. Drizzle with the lemon/oil mixture over the mussels.
10. Bake mussels at 425ºF for 8-12 minutes, until the topping is crunchy.
