Chicken with bones- either whole, thighs, or quarters

Seasoning- Your choice (I use "my house" blend)

Red/Yellow Potatoes

Utensils:

Cooking sheet
Wire rack

This is more of a cooking method, than an actual recipe.

Preheat oven to 425

1.) Cut potatoes in halfs or wedges, so they lay in a single layer on the sheet

2.) Place a wire rack on the sheet over the potatoes

3.) Place chicken on rack and season all sides with whatever seasoning and spices you would like

4.) Roast in oven for 40-50 minutes.

The juices and seasoning from the chicken will drip down and roast the potatoes, making them super flavorful. Can season your chicken with whatever spice mix you like and it will come out great.

I have a small container on my counter I throw all my BBQ rub and other savory type spice mixes from prior recipes if there is any leftover. I mix it all up and I call it "my house blend" that I use, and it is great for this kind of dish. Recommend you doing this too b/c it makes the same meal always a bit of a surprise. Depending on what you have cooked lately it may be spicier, sweeter, smokier, or more garlicky, no telling.
