1/2 c Italian Breadcrumbs
1 Garlic clove (or as many as you like)
2/3 c Grated Pecorino Romano
1/3 c provolone grated or cut up
2 T chopped parsley
4 T Olive oil
1 (1/2) lb flank steak
1 c dry white wine
1 jar of tomato sauce homemade or store bought

Butchers twine

Directions:
Directions:
1.) preheat oven to 350 degrees

2.) Mix bread crumbs, garlic, cheese, parsley, and 2 Tb of olive oil together, to make a thick paste

3.)Lay flank steak out flat, and spread mixture over steak. Roll tightly and secure with twine

4.) Season outside of steak roll with salt and pepper.

5.) In a large Skillet add remaining oil and brown all sides of the roll. Leaving meat in skillet, add wine and bring to a boil.

6.) Pour tomato sauce into skillet with the Braciole, and cover loosely with foil. Place in oven and cook for a total of 1.5 hours. Baste with sauce every 30 minutes. Remove foil after one hour, and cook uncovered for last 30 minutes

7.) Remove from oven and cut into 1/2 inch slices. Serve with sauce.

Easy to make, and looks more impressive than the actual effort it takes.

Saw this on the tv show The Bar and wanted to try it. For the filling you can do anything you want with it, on the show they were putting in prosciutto and pine nuts. I made 2 and it comfortably served 5 people with 3/4 of one roll left over.

I served with side dish of spaghetti noodles with butter and garlic, which was nice and light compared to the hearty main.
