4 - 6 boneless pork loin chops
5 tbsp olive oil, divided
2 tbsp soy sauce
3 tbsp Worcestershire sauce
6 tbsp ketchup
2 tsp onion powder
2 tsp dijon mustard
4 tbsp packed brown sugar
4 cloves minced garlic
1/2 tsp Kosher salt
1/4 tsp Black pepper , to taste (preferably fresh cracked pepper)
1 pound (454 g) small potatoes , cut into bite sized pieces
2 large (2 large) carrots , cut into bite sized pieces or 1 cup small baby carrots, halved
Minced parsley for garnish, optional

1. Line large baking sheet with parchment paper, over aluminum foil (wrap well, this dish makes a mess!)

2. Make the marinade: in large bowl, combine 3 tablespoons of olive oil with the soy sauce, Worcestershire, ketchup, onion powder, mustard, brown sugar and garlic.
Season with salt and pepper to taste. Pour over pork chops in a large ziplock bag and rub the bag between your hands to coat and massage the marinade into the pork chops. Seal the bag and marinade the pork chops for 3-4 hours or overnight.

3. Preheat oven to 425º.

4. Toss the potatoes and carrots with the remaining 1 tablespoon of olive oil. Season with salt and pepper to taste.

5. Add pork chops to baking sheet and surround with carrots and potatoes. Drizzle remaining marinade over chops and vegetables.

6. Bake for 35-40 minutes, or until internal pork chop temperature is 145º.

7. Garnish with parsley.
