Ingredients: Put the following in a mixing bowl: 1/2 c. milk 2 T. melted butter 1 egg Beat the above ingredients lightly.
Sift together: 1 c. all-purpose flour 2 tsp. baking powder 2 T. sugar 1/2 tsp. salt

Directions:Add the milk mixture all at once stir just enough to dampen the flour. Add more milk, if necessary, to make the batter about as thick as heavy cream. Use a 1/4 cup measure to pour batter on medium heat griddle.
Grandpa Timberlake would tell us that there had to be 13 bubbles and then the pancake was ready to turn over. I have found this really works well.
To vary the recipe, add 1/2 cup of fresh blueberries, add chocolate chips or peel quarter an apple and slice in very thin slivers and add to the mix. Use your imagination as this is a basic pancake mix. |

Notes: Have made these pancakes for many years for my kids and the grandkids. I added the vanilla as a secret ingredient, and this added a bit of intrigue. The grandkids would take turns mixing in each ingredient and then cooking their own pancake. Some of the grandkids have fought for the Fannie Farmer cookbook, so now they will all have the pancake recipe. So many fun memories!
