2 celery ribs diced
2 carrots peeled & diced
1 yellow onion diced
2 medium potatoes peeled & diced
1 red pepper diced
˝ green pepper diced
1 14 oz. can italian tomatoes drained & chopped
3 T. olive oil
˝ c. fresh italian parsley chopped
1 T. oregano
2 garlic cloves finely chopped
˝ tsp. red pepper flakes
4 c. water
2 c. chicken broth
2 c. shredded rotisserie chicken
Salt and pepper
2 c. cooked ditalini pasta

Dice the celery, carrots, onion, potatoes and peppers into 1/4-inch pieces. Chop the tomatoes and reserve the juice. Heat a10"stockpot to medium high and add the olive oil. Once the pot is hot, add the celery, carrots, potatoes, onion and peppers. Sauté for 5 min until the vegetables start to soften. Add the tomatoes with their juice, parsley, garlic, water and broth. Season with salt and pepper.
Slowly bring soup to a boil over low heat. Skim off the foam that rises to the surface.
Partially cover pot and simmer 1 hour. Using a potato masher, mash some of the vegetables in the bottom of the pot. Add the chicken to the soup and simmer for 30 more minutes. Meanwhile, cook the pasta and add it to the soup right before serving. Serve soup with freshly grated Parmesan.
