Vodka (unflavored and inexpensive) and Mexican Vanilla Beans

Bourbon and Madagascar Vanilla Beans

Wash bottles with hot, soapy water and rinse; let air dry.

Using a sharp knife, slice each vanilla bean in half, then stary about 1/4'" from one end and cut the vanilla bean lengthwise.

Place 3-5 vanilla beans in each 8-oz. bottle. Using a funnel, pour vodka or bourbon into each bottle completely covering the beans in liquid.

Place caps on tightly and place in cool, dark environment (inside a cupboard). Give each bottle a good shake about every week. Vanilla will be ready to use as soon as 12 weeks but is really good at 6 months.

Mexican vanilla beans are good for baking, creme sauces, ice cream or whenever vanilla is called for.

Madagascar vanilla beans are good for baking, drinks, and desserts. It is rich, dark, and creamy with an overwhelming sweet, buttery aroma.

Remove beans and let dry on paper towel. Add to a jar of granulated sugar and it will soak up whatever flavor they have left.
