1 3/4 C flour
3 T oil
1 tsp salt
1 1/4 C milk
6 beaten eggs

Directions:
Directions:
In large bowl, beat eggs, add liquid ingredients.
slowly add dry ingredients until right consistency
if too thick, add liquid. Batter should be thin.
in 10" fry pan, eat oil.
add enough batter to cover bottom.
Turn over when done.
roll up with favorite toppings

This is a traditional treat of Ferris family. It was only when I went to college that I recognized it as similar to a crepe. Dad (Ken Ferris) always made them at home. It was his mother's recipe. She was from northern Germany, where this was traditional. I think it was GERMAN EIERKUCHEN. obviously, she spelled it phonetically.
We always ate them buttered with sugar and rolled up. Gabe and John took over making them for their families.
