2 lbs. dark chicken cutlets
egg and flour for coating
1 large onion
1 green pepper
1 red pepper
1 yellow pepper (Bgan frozen peppers)
1 lb. fresh mushrooms or 1 can mushrooms
1 c. ketchup
1 c. brown sugar
1 1/4 c. water
salt, pepper, garlic powder to taste
2 T. soy sauce (optional)

Directions:
Directions:
Cut each cutlet into 3 or 4 pieces.
Dredge chicken in eggs, then flour.
Bake chicken in a pan coated with oil, turning once.
Saute all vegetables in oil.
Add ketchup, brown sugar, water and spices(and soy sauce , if using).
Bring to a boil.
Pour over chicken and bake covered @350º for 15 minutes.
