1/4 fresh lime juice
1 tsp fish sauce
1 Tablespoon sugar
1 jalapeno thinly sliced
1 clove garlic finely chopped (can't beat fresh garlic)
2 Tablespoons vegetable oil
2 English cucumbers halved lengthwise, seeded and thinly sliced (reg cukes fine)
1/2 cilantro chopped
1/2 small red onion thinly sliced
salt to taste
1/2 peanuts chopped

Directions:

In large bowl, whisk lime juice with fish sauce, sugar, chiles, garlic and oil.
Add cucumbers, cilantro, peanuts and onion.
Toss to coat
Refrigerate until ready to serve
