1 lb ground sausage
1 lb thin sliced bacon
5-6 large jalapenos
16 oz cream cheese
1/2 c shredded cheese

Directions:
Directions:
Slice the jalapenos down the mild from top to bottom creating 2 halves lengthwise. Remove the insides of the jalapenos including all of the seeds. Place the 2 halves of each jalapeno back together and wrap each jalapeno in just enough sausage to barely cover the jalapeno without covering the top of the jalapeno in order to create a whole in the jalapeno. Mix the cream cheese and shredded cheese together in a small bowl and stuff each jalapeno with the cream cheese mix. Cover the top of the jalapenos with sausage. Wrap the sausage covered jalapenos with bacon, preferably use a toothpick to hold the bacon in place. Place the Armadillo eggs in a smoker and smoke for 45 minutes. Take them out of the smoker and place them in the oven at 350 for 10 minutes or until the bacon is crispy. Let cool for 10-15 minutes before eating.
