Sauce


Ingredients:

3 T oil
1 or 2 T chili powder
2 T flour
2 C water
1 t vinegar
1/2 t garlic powder
1/2 t oregano
1/2 t salt or to taste
Combine all. Simmer 5 minutes.

Boil/simmer together for 5 minutes.

For cheese/bean
2 c cooked pinto beans
4 T chopped green onion
1 c cottage cheese
1/2 c chopped green pepper
1/4 c chopped almonds, sunflower or pumpkin seeds
1/2 c wheat germ (optional)
1/2 c chopped black olives

Mash beans and other filling ingredients. divide into serving portions. Roll up in tortillas. Place seam side down in baking dish cover with sauce. Top with 1 c grated cheese and bake at 350 for 30 minutes

2 chicken breast sized pieces of chicken (I prefer thighs)
Sauce #2
1 c chopped onion
1 clove garlic
2 T butter
3 or 4 tomatoes or 2 c canned diced tomatoes
1 c tomato sauce
1/4 c green chilies
1 t ground cumin
1/2 t each salt, oregano, basil
2 1/2 c grated cheese
3/4 c yogurt or sour cream

12 corn tortillas

Cut about 2 chicken breast sized pieces of cooked chicken in bite-sized pieces.
Saute onion and garlic in butter. Add tomatoes, tomato sauce, chilies, salt and spices.
Bring to boil, simmer covered for 20 minutes. Remove from heat.
Dip corn tortillas in sauce #2 to coat and soften. Place some chicken and 2 T cheese on each. Roll up place in 9x12 baking pan. Blend yogurt into remaining sauce. Pour over tortillas Sprinkle with remaining cheese. cover and bake at 350 for 20 to 30 minutes. Don't overbake

I used to combine these two recipes depending on what I had at hand. I think I always used the Sauce #1 but I don't remember. I made these for years.
