4 Pork Chops 3/4" thick
1 Tbsp. EVOO
1/2 tsp. Garlic Powder
Salt & Pepper to Taste
1 sm Onion, diced
3 c. Mushrooms, sliced
1-1/4 c. Beef or Chicken Broth, divided
1 can Cream of Mushroom Soup
1 Tbsp. Parsley
2 Tbsp. Cornstarch

Directions:

Season pork chops with garlic powder, salt and pepper.

Set Instant Pot to Sauté, then add oil. When hot, brown chops, about 2 minutes per side. Remove and set aside.

Add 1 cup broth to deglaze and scrape bits from bottom. In order, add mushrooms, onion, pork chops. Top with soup and parsley.

Seal lid and set to High Pressure for 15 minutes (will take about 15 minutes to reach pressure). Then allow to naturally release pressure (about 10 minutes). Remove chops and set aside.

Place remaining broth and cornstarch in small bowl, stirring to combine. Turn Instant Pot to Sauté and bring gravy to a boil. Add cornstarch mixture slowly to reach desired consistency.

Serve pork chops over mash potatoes with gravy.

Note: If pork chops are frozen, omit browning process and add 5 minutes to cooking time.
