1 pkg. Good Season's Italian dressing mix
2/3 c. oil
2 Tbsp. olive oil
1/2 cup vinegar
1 or 2 tsp. sugar
1 small red onion, sliced thin
1 small jar pimento, chopped
1 small jar artichokes, in pieces
1 head lettuce
parmesan cheese

Directions:
Directions:
Mix Good Season's mix, oil, olive oil, vinegar and sugar in a jar. Shake well and refrigerate.
Add onion and pimento to mix. Before serving, add dressing to prepared lettuce, tossing lightly. Sprinkle with parmesan cheese. Add artichokes to top of lettuce.

Pinocchio's was a restaurant in Quincy, known for this wonderful salad. My Aunt Marjie (Musholt) Bergman got the recipe for us several years ago.
