Ingredients: Salmon burgers:
2 lb. Salmon, cut in chunks 2 Tbsp. Mayonnaise Zest of one lemon 1 1/2 tsp. Dijon mustard 1 1/2 tsp. Capers, drained 1 tsp. Smoked paprika 1 tsp. Sea salt Pepper, fresh ground Pinch of cayenne 3 Tbsp. Sliced green onions
Secret sauce:
1/3 cup mayonnaise 3 Tbsp. Ketchup 1 Tbsp. Dill relish 3/4 tsp. Sriracha sauce 1 Tbsp. Lemon juice Salt and Pepper
8 burger buns Avocado Sliced tomatoes Lettuce

Directions:To prepare burgers, pulse all ingredients in food processor to combine. Do not puree as you want a few chunks. Form 8 patties. Put in fridge to set up while you make sauce.
For sauce, stir all ingredients together in a small bowl. Adjust for salt and pepper.
Preheat a nonstick frypan to medium heat. Add 1 Tbsp. oil to the pan to heat. Cook 4 patties at a time. Brown about 4 minutes per side. Remove and let rest while you toast burger buns. Serve with mashed avocado, lettuce, sliced tomato and lots of sauce. |
